Who we are

My name is Brandon Brown, a father, a chef, and an innovative entrepreneur. Now at the age of 32, i’ve found myself with a variety of life experience that has brought me where i stand today, that is operating Papa B’s Fried Chicken.

I started my first food business, Buenas ‘Dillas Quesadillas, at the age of 21 after a salmon fishing season in Bristol Bay, AK. I’d worked with Ballards Burgers and Seafood around Seattle vending major events like Bumbershoot, and different expos and fairs.

Buenas ‘Dillas provided high quality quesadillas, with local cheeses and meats, we operated for 2 years, at the Bellingham Famers Markets, and local PNW festivals like Summer Meltdown, and the Skagit County Fair.

That business dissolved, largely because of the seasonal nature of that work, and also seeing the complexities of large event food vending. I packed up my business and started work with a well established mobile caterer, Chef Rhody.

With Rhody, we would travel from Colorado to Oregon, Washington to Idaho doing private large event catering. Dishes were pre ordered, and we would feed over 1000 people per day, breakfast, lunch, and dinner. I look back at those numbers and still amazed by the level of execution i got to be apart of.

COVID came, and with that event catering dried up. I took some work leading a Kitchen for a retreat center in Costa RIca, where i ran the kitchen for 3 months.

Coming back to the states, i found myself on Orcas Island, in the San Juan Islands, where i was able to purchase and start my first food truck in a converted 1974 RV, Farm to Ferry. We were based out of the ferry landing, and offered seasonal and local cuisine to locals and travelers. Out of this food truck came some incredible food, but the most desired menu item was our famous Fried Chicken Sandwich.

This food truck operated for 4 years, before closing our doors. The seasonality of the island proved to be a real issue for business. Before closing, i had met my soon to be wife, and we welcomed our daughter Nylah June to this world in April of 2025.

I sold my food truck, and we moved out to Sandpoint, ID to be near her family. At this point, i had been doing event work throughout the time of the food truck, and would continue to do events. This time we moved into, exclusively Fried Chicken, Garlic Parmesan Fries, and other Fried Vegetables.

We saw how this was unique. No one i met still, is doing hand breaded fried chicken. And the crowds loved it. It was quick to serve, and wowed many. So now here we are. I have spent this Winter of ‘25-’26 in Arizona doing massive events like the 4th Ave Street Fair, the Tuscon Gem Show, Food Festivals, and will have a full summer, with different county fairs and music festivals.

And we are just getting started!

By the Winter of ‘26-’27 we will have build our custom event food truck and will continue to do full time event vending across the Western USA.
